The Gaviña family has been in the coffee business for over 135 years as growers, importers, and roasters of specialty coffee. The most important word in this statement is family. A strong sense of family is at the heart of F. Gaviña & Sons, Inc., more commonly known as Gaviña. The Company, one of the largest and most successful coffee roasters in the western United States, is led by a team of four siblings: Paco, Pedro, Jose and Leonor Gaviña.
Gaviña has been a U.S. specialty coffee roaster since 1967 and it is the largest privately held minority-owned coffee roaster nationwide, producing more than 32 million pounds of roasted coffee a year. The installation of our new state-of-the-art roasting and packing facility has been completed, with a capacity of 60 million pounds, expandable to 100 million pounds.

Selecting the Finest Beans
Our specialty coffees are 100% Arabica. This is the better quality, more flavorful coffee, used by the higher quality specialty segment of coffee market.
We guarantee a stable supply of the highest quality coffees for our customers. Our green coffee buyer tastes coffees from around the world and selects the best quality of each coffee origin to produce over 100 Gaviña coffee selections.
Once the green coffee arrives at the Gaviña plant, it is sampled once again by our green coffee buyer to ensure the quality of the coffee received. Each lot is identified by country of origin, broker, importer, and lot number. Only after the shipment has been approved by the green coffee buyer will it be roasted. This is one of the ways we control the quality of our green coffee before roasting.
Roasting
Gaviña has a newly installed state-of-the-art roasting and packing facility. We use Probat roasters to ensure evenly roasted beans. Our Master Roaster has over 25 years experience in roasting gourmet coffee.
We are Organic (Stellar Certification Services) and Kosher (KSA) certified and we are registered with the FDA according to the Bioterrorism Act of 2002.
Packaging
Gaviña is a pioneer in coffee packaging. We were one of the first roasters to use an oxygen barrier foil film with a one-way valve to keep whole bean coffees fresh. Oxygen is coffee’s worst enemy, and the foil film and one-way valve protect coffee from oxygen, keeping it fresh.
All of our coffees are nitrogen flushed or vacuum sealed, ensuring that the coffee will remain fresh until the package is opened.
Quality Control
Quality control checks are performed at various stages of the roasting and packaging processes. These checks ensure that the packaging integrity is maintained, and that oxygen levels, roast color, moisture content, and grind meet our stringent specifications and our customers expectations of superior quality.
The entire plant is administered under Good Manufacturing Practices (GMP). These guidelines are set by the Food and Drug Administration (FDA). The company is audited by an outside inspector for compliance to the GMP standards once a year. We received a 95% grade on our 2006 GMP audit.
Under the GMP umbrella is a very strict mini-program called Hazard Analysis and Critical Control Points (HACCP). This program looks at anything that can go wrong with coffee production. It is very detailed and it must follow very strict FDA rules.
Twice a year we conduct a Mock Recall of a randomly chosen product. We must account for 100% of the product within two hours. This assures us that if there is a product recall, we would be able to recover the entire lot of product. Full records are maintained by Gaviña and then evaluated by the auditor.
